Creamy Chicken Taquitos

A few weeks ago I went to a Crochet Party at a new friend's, Sara's, house.

Can I just say that I am loving meeting new friends?!? 
I joined MOPS this year & have met lots of new people. I have enjoyed meeting new friends & having other circles of relationships. And my relationships are expanding- as I'm getting to know my new friends more I'm meeting more new friends through them & I am loving it!


I have this theory that this stage of life- married, kids, life & responsibilities, etc- is a really lonely time for women. And I don't think it matters whether you're 23, 33, or 43. I think we're just so busy taking care of other people & we're busy doin' what we gotta get done that there's not much time or energy left for building our own relationships. And the times when we do get together with our friends it's frequently with kids in tow & it's a different dynamic. Yes, I spend time with friends at playdates & taking our kids to the zoo but there are small ears in the room so I cannot always share what's really going on with ME & I am frequently entertaining or interacting with the toddlers as much (or more) as I am with my adult friends. Even though I have spent time with women sometimes I feel like I haven't really (REALLY!) spent time with anyone.
And I can imagine that the working mamas have it worse b/c I'm sure that if the opportunity comes up for them to take some time with other women without kids there's a feeling of obligation that they SHOULD be home with spouse & kids AND guilt if they decide to take an evening away.
Does that make any sense??? Anyone else notice that???

Sarah has a blog called Shy of Perfect and she hangcrafts jewelry for her Etsy shop. Sara's jewelry is beautiful & it's reasonably priced. I have the grey mums earrings & LOVE them! Go check out her pieces. You'll be supporting a stay at home mom in the Fort Worth area.

But, I digress.
Like many girls, shopping & jewlery can get me a little off topic.

The Crochet Party.
I do not crochet.
But I was hoping that my time at Sarah's house would remedy this.

Ooh~ I'll crochet a scarf! I will love it & it will be beautiful & I'll feel fabulous when I wear it! Cannot wait!

This is what I accomplished in 4 hours.
At this point I realized a few things:
1. I'm getting really good at the Single Crochet stitch.
2. Maybe I should have learned another stitch while at the Crochet Party.
3. Perhaps I will make a hotpad instead of a scarf.

As my husband just pointed out, This is a cooking blog & crocheting has nothing to do with cooking.
To which I replied, "Yes, it does, I'm going to get to that."
He reminded me that it's not just my blog.
And I retorted that I have way more posts than Kristie & therefore she can't complain." (I'm just kidding, Kristie!)
J- "Because you're blogging about other stuff that has nothing to do with cooking!"  

At this Crochet Party Sarah made dinner for us. She made Chicken Taquitos. (See, there is a segue to cooking!) 
Now, I've gotta be honest. When she said, "I made taquitos." I thought, "ugh... not so good." I love Mexican food- just not the overly fried & slimy & chewy-gross kind. But I was pleasantly surprised- these were Amazing!

Sarah forwarded me the recipe and I was so excited to make them!
But then I had plans this afternoon so my husband made them. 
I appreciate him helping & I'm so glad that he wasn't sitting around waiting on me to come home to feed the kids, And I shouldn't be at all disappointed that I didn't get to make them, right?

They were very yummy! Try them some time!

1/3 C (3 oz) cream cheese
1/4 C green salsa
1T fresh lime juice
1/2 t cumin
1 t chili powder
1/2 t onion powder
1/4 t granulated garlic
3 T chopped cilantro
2 T sliced green onions

2 C shredded cooked chicken
1 C grated pepperjack cheese

small corn tortillas
kosher salt
cooking spray

Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.

Heat cream cheese in the microwave for about 20-30 seconds so it's soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.
You can prepare up to this step ahead of time. Just keep the mixture in the fridge.

Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. Usually 20-30 seconds will do it. If you find yours are cracking when you roll them or come unrolled right away, just try heating them longer and try the paper towel thing.

Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges.

Then roll it up as tight as you can.

Place seam side down on the baking sheet. Lay all of the taquitos on the baking sheet and make sure they are not touching each other. Spray the tops lightly with cooking spray or an oil mister and sprinkle some kosher salt on top.

Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown.

  1. Hey Alison! I was at the crochet party too, however, I missed dinner because I had to wait for my husband to come home from work, which means I missed the taquitos so thanks for sharing the recipe. Also I have never crocheted... well I tried to learn via a youtube video which did not go over very well. You can do it, keep at it, I have pulled my original work out many, many times and I am actually on a second skein of yarn. We will have to get together and crochet!
