Menu Monday-Kristie's List

Here's what's on the menu this week at the Lentz house. (in no particular order)

Apple Cider Chicken with rice & roasted sweet potatoes
Swedish Meatballs with egg noodles & sauteed squash
Chicken Stir Fry with rice
Chipotle style burritos (check link for recipe I'll be using) with cilantro lime rice & black beans
Roast Chicken with mashed potatoes & green beans
Meatloaf with mashed or roasted potatoes 


Tonight I think I'll be trying out Swedish meatballs.  A new recipe, let's hope it's a success!


Update:  Swedish meatballs were alright.  Probably won't make these again.  Boo

Hoagies & Sliders

Roast Beef Leftovers: Hoagies & Sliders

Made High Temperature Eye of Round Roast a few days ago. We just got back in town from visiting with J's family in FL and we needed something easy. With laundry, unpacking, & Christmas Tree shopping we didn't have a lot of time to spend in the kitchen.


We made the roast Sunday. Bring on the leftovers!
Monday I made fajitas. They were thrown together in a hurry & we all ate hovering around the bar. Just one of those kinds of nights.
Last night we made Hoagies & Sliders.
Tonight we'll have Steak Ceasar Salads w/flatout croutons.

Leftover Roast Beef Hoagies
Green Bell Pepper, sliced
Yellow Onion, Sliced
Leftover Roast Beef, sliced
mayo
Provolone or Swiss Cheese
Whole Wheat Hoagie Roll

Saute Bell Pepper & Onion
Slice Hoagie Roll, fill w/ mayo, pepper, onion, roast beef, top with cheese.
Wrap in foil.
Bake 350 15 minutes.

Leftover Roast Beef Sliders
Roast Beef, sliced
Swiss Cheese
mayo
Dinner Rolls
Slice Dinner Rolls
Fill w/mayo, roast beef, cheese.
Bake 350 until cheese is melted, flipping once.



When Jason got home from work he began singing
"Hoagies & Sliders, Hoagies & Sliders.
Lima Beans, Lima Beans, Lima Beans, Lima Beans."

Since not everyone will get out Circa 1994 humor I figured I'd include the video clip so you didn't think we're dorks. (Well, we may be dorks & that's okay but at least you'll know we're making a joke when we're being dorks!)

Menu Monday

It's Monday!  The beginning of another week and a whole new set of to do lists.  So far I'm not doing too bad- both kids fed, bathed, baby is napping, and clothes are in the dryer.  We have a playdate/ prayer group meeting and then LOTS of laundry baskets to empty.  I love so much that I get to be home with my babies on a Monday morning!

I'm the kind of person who gets overwhelmed easily by tasks and to do's, so it helps for me to plan out my meals for the week.  I'm totally right brained and not an organized person naturally, it takes a lot of effort on my part to be organized.  Menu planning really does make my life easier.

So here's what we're having this week (well I started Saturday):

Saturday: Crock Pot Roast
Sunday:  Leftovers -(Hey!  it's a day of rest! gimme a break)
Monday:  Coconut Panko Chicken fingers
Tuesday:  Meatloaf
Wednesday:  leftovers or sandwiches (sometimes I don't cook Wed nights b/c Steven is still at church)
Thursday:  Butter Chicken
Friday:  Pan Fried Chicken Thighs

Other easy meals I have in mind in case I feel like substituting:  Soup & Grilled Cheese, pigs in a blanket, homemade pizza

Now, I don't always stick to the plan exactly.  If I'm not in the mood for what I've planned then I'll switch it up.  No biggie.

And b/c it's no fun to not have a picture, here's my precious baby girl!  (I do have a precious boy too, but his pics lately just aren't as stinkin cute as this one.  Sorry Will!)
